Blue Cheese Meatloaf

Ingredients:
1 lb ground sirloin 1 tbsp tomato paste 1 egg 1/2 cup italian bread crumbs 1 tbsp seasoning salt 1 tsp pepper 1-2 tsp garlic 1/2 white or yellow onion 1 tbsp italian seasoning 3/4 cup blue cheese crumbs 1/3 cup BBQ sauce
Preparation:
In large mixing bowl mix ground sirloin and all other ingredients except blue cheese crumbles and BBQ sauce. Hand mix until well blended together.Place mixture on a large piece of wax paper or aluminum foil. Spread sirloin mixture in a rectangle (the length of your loaf pan) and as wide as you need until the meat is flat and about 1/2 an inch thick. I use a little extra salt and pepper at this point lightly sprinkle all over. Then you spread the BBQ sauce all over making sure its pretty even. Crumble blue cheese evenly all over the bbq sauce. From one end gently roll the meatloaf, keeping in mind it has to fit in your loaf pan. (think a Jelly roll or a Cinnamon roll).I use the wax paper to help with this, rolling the meat over itself and pulling the wax paper away from it. Once its completely rolled I place my loaf pan face down over my meat loaf and flip with the wax paper. Discard the wax paper. Bake at 350 for an hour to an hour and a half. You want the top to be browned and the juices to be bubbling. Let stand for 5-10 min. Cut and serve. I like a little extra BBQ on the side. *You can also use half sirloin and half hot italian sausage. It makes it a bit spicier. Or try adding bacon before the BBQ sauce.
