Ingredients:
4 chicken breast 1 package ranch seasoning 1 m. yellow onion chopped 1 tsp cumin 1 TBSP chili powder 1 tsp oregano 2 tsp minced garlic 24-30 oz chicken broth 1 can cannelloni beans (rinsed) 1 can black beans (rinsed) 1 can corn (strained) 2 cans rotel with green chilies (strained) 1 can green chilies (strained) 2 jalapeņos (halved and seeded) 1 package cream cheese Avocado cilantro and Monterey Jack cheese - garnish
Preparation:
In crock pot add/stir: chicken breast, package ranch seasoning, yellow onion, cumin, chili powder, 1 tsp oregano, 2 tsp minced garlic and chicken broth. Cook on High for 4 hours; Add: cannelloni beans, black beans, corn, rotel with green chilies, and additional green chilies. Cook on High for 2 hours; Add/Stir: 2 jalapenos (halved and seeded) and cream cheese until mixed. Cook for 30 minutes. Spoon out and garnish with sliced avocado, chopped cilantro and shredded Monterrey Jack cheese. Salt and pepper to taste
