Recipe Name: Steak wtih Blue Cheese Butter

Ingredients:
1/4 Cup butter or margarine-softened
1/4 cup crumbled blue cheese (1 oz.)
1 Tbsp. snipped fresh parsley
2 tsp. snipped fresh basil or 1/2 tsp. dried basil-crushed
1 clove garlic-minced
6 beef T-bone or porterhouse steaks-cut 1 inch thick

Preparation:
1. For butter mixture, stir together the butter, blue cheese, parsley, basil, and garlic. Set aside.
2. Trim fat from steaks. If desired, sprinkle steaks with pepper. Grill steaks on rack of an uncovered grill directly over medium coals to desired doneness, turning once. (Allow 11 to 14 minutes for medium-rare doneness [145 degrees] or 13 to 16 minutes for medium doneness [160 degrees].) To serve, top each steak with about 1 tablespoon of the butter mixture. Serves 6.
