Recipe Name: French Onion Mashed Potatoes
Ingredients:
18 Tbsp Unsalted Butter
4 sweet yellow onions - thinly sliced
Salt
5 pounds yukon gold potatoes
1 1/2 cups Heavy Whipping Cream
8 oz Gruyere Cheese - grated
Black Pepper
Preparation:
Caramelized Onions: Heat 6 oz butter in a skillet over medium-low heat. Add the onions with a big pinch of salt. Cook for at least 10 minutes stirring often, then reduce the heat to low. Continue cooking until caramelized and golden, about 45-60 minutes.
Potatoes: Slice in half or in quarters of equal size. Place in large pot of cold water over medium heat. Season water with a big pinch of salt. Bring potatoes to a boil, then boil until they are fork tender (12-15 minutes).
While the potatoes are boiling, heat 12 oz butter and the whipping cream in a saucepan over medium-low heat until the mixture is warmed through.
Drain the potatoes well and place them back in the pot. Use a potato masher and mash to the consistency you enjoy. Mash in half of the butter/cream mixture and 1 tsp salt. Continue mixing and folding in the cream mixture for a minute or two. Stir in the rest of the mixture and then add the Gruyere cheese slowly, allowing the cheese to melt. Stir in half the caramelized onions. Taste frequently and add salt as needed to meet your taste preference. Add remaining onions as desired saving a few to place as a topping.
